Fragrant lemongrass, creamy coconut milk, fiery Thai red chillies and zesty makrut lime leaves are ingredients familiar to Thai cuisine. Highstreet Thai restaurants in the UK include the chains Busaba & Rosa’s Thai as well as a host of successful independently family-owned eateries who serve up steaming portions of Pad Thai, Massaman Curry and Tom Yum soup and my personal favourite – Som Tam: a salad of green papaya, dried shrimp and green beans drenched in a hot and tangy dressing, topped with roasted peanuts. Many family-owned British pubs around Essex serve Thai food which does go down well after a few pints.

The principle of Thai cooking is based on balancing the salty, sweet, and sour flavours with the heat from chillies and sometimes the creamy notes from coconut. Fish sauce and fermented shrimp paste are frequently used in Thai cooking.
